Overnight Oats with Chia, Berries & Cinnamon
This simple recipe is a nutritious way to begin the day. Chia seeds offer up omega-3s and fiber for gut and brain health; berries provide antioxidants that combat inflammation and support cognitive function; cinnamon may help regulate blood sugar and reduce oxidative stress; and oats are a prebiotic whole grain that supports digestion and heart health.

Ingredients (1 serving):
½ cup rolled oats
1 tbsp chia seeds
¾ cup unsweetened almond milk (or more for desired consistency)
½ tsp ground cinnamon
½ cup mixed berries (fresh or frozen)
Optional: 1 tsp maple syrup or honey for sweetness
Optional toppings: sliced almonds, flaxseeds, nut butter, or hemp hearts
Instructions:
In a jar or bowl, combine oats, chia seeds, cinnamon, and almond milk. Stir well.
Fold in berries and sweetener, if using.
Cover and refrigerate overnight (or at least 4 hours).
In the morning, stir and add more milk if needed. Top with desired extras and enjoy cold or slightly warmed.




This looks great. Would it be even healthier to use oat groats instead of oats-- and if so, would they soften enough overnight to be edible?
