Crispy Gnocci with Tomatoes and Zucchini. This has become one of our favorite weeknight meals. It’s ready in about 20-25 minutes and is both colorful and nutritious. Feel free to swap out burrata for mozzarella balls or even feta; however, we love how the burrata adds a creamy texture. This is a great one to make when your garden is in full swing!
Intermittent Fasting: Worth a Try? Intermittent fasting generally involves cycling between periods of eating and fasting. There are several popular methods, such as the 16:8 plan (16 hours of fasting, 8 hours of eating), alternate-day fasting, or more extended fasts that last 24 hours or longer. The idea is that giving the body regular breaks from food can improve metabolism, reduce inflammation, and activate cellular repair mechanisms.
There is some promising research suggesting that intermittent fasting may mimic some of the effects of caloric restriction - a well-documented practice in which total daily calories are reduced by 15 to 40 percent. In animal studies, caloric restriction has consistently been shown to extend lifespan and reduce the risk of serious diseases like diabetes, cardiovascular disease, and cancer.
How To Make Sourdough Bread. One of my favorite things as a dietitian is telling people that it’s absolutely okay to eat bread! Bread is part of my daily diet. When paired with healthy fats, proteins, and fiber, it fits beautifully into an anti-inflammatory diet.
Sourdough is my all-time favorite bread, and nothing beats homemade. I’ve been baking my own for years, and I finally feel like I have a good method. Thanks to its long fermentation process, sourdough tends to have a lower glycemic index, meaning it won’t spike blood sugar as quickly. The fermentation also breaks down some gluten and phytic acid, making the bread’s nutrients more bioavailable.
Foods We Have Been Loving Lately. I always love pasta, but this time of year is perfect for making pesto pasta. I’ve been loving Montova’s organic pasta from Italy; it has that nice firm bite that holds up well to sauce. I’ve got basil growing like crazy in the garden, so I made a walnut pesto (since I didn’t have any pine nuts on hand). It came out delicious, but next time I’m thinking of experimenting with pistachios.
