Slow-Cooker Black-Eyed Peas
A hearty "good luck" meal
Deb’s Slow Cooker Black-Eyed Peas
Growing up, we would spend Christmas through New Year’s with my family in Tucson. It would be a full house! My grandmother was originally from the South Georgia/Florida line; her cooking definitely reflected that, and I can look back and appreciate it now. I just remember being little and wondering what the strange smell on New Year’s Day was! It smelled like bacon, but at the same time, it was strange! Black Eyed Peas in a crock pot! Everyone was required to eat at least one for good luck! This tradition is embedded in me, and now I cook blacked eyed peas once a year - just in case…
Serves 6
Ingredients
1 (16-ounce) package dried black-eyed peas
6 cups water
2 bouillon cubes (vegetable or chicken)
1 teaspoon salt
½ medium yellow onion, diced
2 cloves garlic, minced
1½ teaspoons smoked paprika
Instructions
1. Sort and rinse the peas, discarding any discolored peas.
2. Add the peas, water, bullion cubes, salt, onion, garlic, and smoked paprika to your slow cooker and cook on Low for 8 hours (or High 5-6 hours).
