Salmon Log Appetizer
A crowd-pleasing appetizer
Justine’s Salmon Log
Every holiday gathering needs that one appetizer everyone hovers around, and for our family, this salmon log is it! Straight from my mom’s recipe box, it’s been part of our celebrations for years.
Serves 8–10
Ingredients
1 15 oz can salmon, deboned and deskinned
1 8 oz pkg. cream cheese, softened
1 T. lemon juice
2 T. grated onion
1 tsp. horseradish
1 tsp liquid smoke (optional)
¼ tsp. salt
½ c. chopped walnuts
3 T. snipped parsley
Instructions
Add drained salmon to a medium bowl. Mix in cream cheese, lemon juice, grated onion, horseradish, liquid smoke, and salt. Mix well.
Chill for ~3 hours. Mix in chopped walnuts and parsley.
Lay a piece of plastic wrap or parchment paper on a clean work surface. Spoon the salmon mixture onto the center and use your hands or a spatula to roughly shape it into a thick log.
Wrap the plastic or parchment around the mixture and gently roll it back and forth on the counter to smooth and tighten the shape, forming an even log.
Unwrap the salmon log, place it on a serving platter, and serve with crackers or sliced vegetables.
Tip: For a nice presentation, reserve a small amount of chopped walnuts and parsley and gently press them onto the outside of the log before the final chill.
