Salmon and Zucchini Crepes
Paper-thin egg pancakes that look and taste like French Crepes, filled with a light but savory mixture of salmon and zucchini. This is a great use for leftover salmon! Of course you can also leave out the salmon and this dish becomes vegetarian; it’s still very good with just the zucchini.
