New Year's Eve and New Year’s Day Recipes
Here are some of the Weil Nutrition Corner™ Teams’ go-to recipes for the holidays. Enjoy!
Dr. Weil’s New Year’s Eve Mushroom Lasagna
Lasagna is a pretty popular New Year’s Eve (or holiday) entree. Easy to make for a crowd! I like to keep my lasagnas pretty simple, with just sauteed mushrooms, cheese, noodles, and homemade tomato sauce. I prefer regular lasagna noodles to no-boil ones because I think the texture is better. If you want, add a handful of chopped fresh basil or a few tablespoons of pesto between one of the layers. I know it’s tempting to cut into it straight away, but let it sit for at least 15 minutes after baking to set.
Justine’s Salmon Log Appetizer
Every holiday gathering needs that one appetizer everyone hovers around, and for our family, this salmon log is it! Straight from my mom’s recipe box, it’s been part of our celebrations for years.
Callie’s Popcorn (+ Toppers)!
I love a bowl of popcorn and a good movie on New Year’s Eve, and topping them with healthy spices and herbs helps keep things creative! Try some of my favorites!
Deb’s Slow Cooker Black-Eyed Peas
Growing up, we would spend Christmas through New Year’s with my family in Tucson. It would be a full house! My grandmother was originally from the South Georgia/Florida line; her cooking definitely reflected that, and I can look back and appreciate it now. I just remember being little and wondering what the strange smell on New Year’s Day was! It smelled like bacon, but at the same time, it was strange! Black Eyed Peas in a crock pot! Everyone was required to eat at least one for good luck! This tradition is embedded in me, and now I cook blacked eyed peas once a year - just in case…

All the best with gratitude for your good work in the kitchen!
I liked seeing the option of giving your popcorn a spritz of avocado oil to help some of the other seasonings stick! 😊
