Tangy Asian Cucumber Salad
This salad is light, refreshing yet totally satisfying. We love to eat it on it’s own, or as a side dish - it makes a great pairing with grilled tofu or fish. It is simple to make, and keeps well in the refrigerator for up to 2 days, but is best enjoyed immediately after making.
