Mashed Green Potatoes
These mashed green potatoes are a great way to get kids to eat their vegetables. I used to make them all the time for Diana when she was little. They are easy to make and make for a great weeknight meal - especially if you microwave the potatoes, which I do. Taste and adjust the seasonings as needed.
