The Benefits of Tofu
“I love tofu as a protein source! Once you know how to make it, it’s quick and easy and can be used in a variety of cuisines. The key is to remove any excess liquid by pressing it or using extra-firm tofu, then loading it up with your favorite sauce. We eat tofu at least 2-3 times a week.” - Diana
Like cheese from dairy milk, tofu is made from soy milk by coagulating it. The curds are then pressed into soft white blocks. Tofu comes in a few forms, depending on water content: silken, soft, firm, or extra-firm. Tofu offers about 140 calories per serving, and ~14g of protein, ~8g of fat, ~1g of fiber, and ~2g of carbs.
With a mild, neutral flavor that is great at absorbing sauces in stir-fries and as a neutral base in dips, tofu can be prepared in different ways. We primarily use extra-firm tofu and typically wrap it in a dishcloth and press it between two heavy books for about 10 minutes before using. This helps to get out as much water as possible. Then we like to dust it in arrowroot and use it as a protein source in tacos, stir fries, sandwiches, or as a side. Tofu can be bland, so you need a good sauce and strong flavors to accompany it.
