Lion’s Mane Mushroom Sauté with Garlic & Greens

Ingredients (Serves 2–3)
1 lb lion’s mane mushrooms, torn into bite-size pieces
2 tbsp olive oil or avocado oil
3 garlic cloves, thinly sliced
2 cups baby spinach or kale
1 tbsp tamari or low-sodium soy sauce
½ tsp black pepper
Squeeze of lemon juice
Instructions
Heat olive oil in a skillet over medium-high heat.
Add mushrooms in a single layer. Cook without stirring for 3-4 minutes until golden, then flip.
Add garlic and cook for 1-2 minutes until fragrant.
Stir in greens and tamari, sauté until wilted.
Finish with black pepper and a squeeze of lemon juice.
