Lentil & Walnut “Brain Bowl” (Vegetarian)
Simple and nourishing
Lentils provide iron and B vitamins needed for brain energy metabolism. Walnuts are the top plant source of ALA omega-3s. Beets and berries add nitrates and antioxidants that support mental clarity.
What to include:
¾ cup cooked lentils (green or brown)
¼ cup chopped walnuts
Roasted beets or sliced strawberries
Arugula or spring mix
Crumbled goat cheese or tahini dressing
Optional: sprinkle of pumpkin seeds for added zinc




Just curious, is there a reason the picture doesn't match the recipe? I've always liked cookbooks with pictures so I can see what I'm making. :)
