Lentil & Greens Soup with Kimchi Toast
This cozy meal option is simple to make and packs a powerful gut-healthy punch: lentils, prebiotics, and greens offer fiber, while the kimchi provides live probiotics.
Ingredients:
For the soup:
1 tbsp olive oil
1/2 cup chopped onion
1 garlic clove (minced)
1 carrot, diced
1/2 cup dry green lentils
3 cups vegetable broth
1 cup chopped kale or Swiss chard
1/2 tsp cumin + pinch of salt
For the toast:
1 slice sprouted grain or sourdough bread
2 tbsp mashed avocado
2 tbsp kimchi
Directions:
Sauté onion, garlic, and carrot in olive oil until soft.
Add lentils, broth, and spices; simmer for 20–25 mins until tender.
Stir in greens at the end and cook for 3 more minutes.
Meanwhile, toast bread and top with avocado + kimchi.
