Lemon-Herb Farro with Olive Oil
This versatile recipe is delicious on its own or as a side dish or base for vegetables, tofu or fish.
Ingredients
1 cup cooked farro (or barley)
1 tablespoon extra-virgin olive oil
Juice of ½ lemon
1 tablespoon chopped fresh herbs (parsley or basil)
Pinch of sea salt and black pepper
Instructions
Place warm farro in a bowl.
Toss with olive oil, lemon juice, herbs, salt, and pepper.
Serve warm or at room temperature.
