Immune-Boosting Garlic & Lentil Soup
An antioxidant-rich, cozy and warming soup
Garlic and turmeric are rich in immune-supportive antioxidants; lentils are a great source of protein and fiber; and greens add micronutrients that support detoxification and help fight inflammation.
Ingredients
1 Tbsp olive oil
1 small onion, diced
4 garlic cloves, finely chopped (let rest 10 min before cooking)
1 cup dry lentils, rinsed
1 carrot, diced
1 tsp turmeric
1 tsp ground cumin
4 cups vegetable broth
2 cups chopped spinach or kale
Salt and pepper to taste
Juice of ½ lemon
Directions
Warm olive oil in a pot, sauté onion until soft.
Add garlic, spices, and carrots; cook for 1 minute.
Stir in lentils and broth. Simmer for 25 - 30 minutes, until the lentils are tender.
Add greens and cook 5 minutes more. Finish with lemon juice.
