Grilled Zucchini with Lemon & Herbs
An easy side dish for summer grilling
Simple, zesty and an ideal side when grilling.
Ingredients:
2 zucchinis, sliced lengthwise into 1/4-inch strips
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon fresh basil or thyme, chopped
Sea salt and black pepper to taste
Instructions:
Preheat grill or grill pan over medium-high.
Toss zucchini in olive oil, salt, and pepper.
Grill 2–3 minutes per side until charred and tender.
Sprinkle with lemon zest and herbs before serving.
