Golden Turmeric & Carrot Breakfast Cookies
These cookies are really more like healthy bites. Perfect for breakfast, as a snack, or as a dessert, they include plenty of anti-inflammatory ingredients. Give them a try, we think you (and your kiddos) will love them!
Makes 12 cookies
Ingredients
1 cup rolled oats
¾ cup loosely packed finely grated carrot
1 mashed ripe banana
¼ cup unsweetened applesauce
1 tsp cinnamon
1 tsp turmeric
¼ tsp baking soda
3 tbsp milk
1/8 tsp black pepper
2 tbsp mini chocolate chips or raisins
Instructions
Preheat oven to 350°F (175°C). Line a baking tray with parchment.
Mix all ingredients in a bowl until well combined.
Scoop into small rounds and flatten slightly.
Bake for 12–14 minutes or until golden on edges.
Cool and store in an airtight container.
