Garlic-Tahini Veggie Immunity Bowl
A great "reset" meal for a healthy year!
Chock full of healthy ingredients, the garlic and tahini supply sulfur compounds, antioxidants, and healthy fats that support digestion and immunity. Fiber from the beans and grains also nourishes your gut bacteria.
Ingredients
2 cups cooked quinoa or brown rice
1 cup roasted mixed vegetables (broccoli, bell pepper, zucchini)
1 can chickpeas, rinsed and drained
2 garlic cloves, chopped and rested
2 Tbsp tahini
1 Tbsp lemon juice
Water to thin, salt to taste
Directions
In a small bowl, whisk garlic, tahini, lemon juice, and water until smooth.
Toss warm grains, veggies, and chickpeas in the dressing.
Serve topped with herbs or avocado slices.
