Garlic Lemon Mustard Dressing

This dressing is perfect for heartier ingredients, such as chickpeas, dark leafy greens like kale, and drizzled over roasted proteins.
Ingredients:
Juice of 1 lemon (about 2 tbsp)
2 tbsp olive oil
1 tsp Dijon mustard
1 clove garlic, grated or minced
1/2 tsp honey or maple syrup (optional)
Salt and cracked pepper to taste
Instructions:
Whisk vigorously or shake in a jar. Let the dressing sit for 5 - 10 minutes so the garlic mellows.
