Energy-Boosting Lentil Soup
Lentils are good for energy because they are rich in complex carbohydrates that provide a slow, sustained energy release, and they contain iron which is crucial for producing energy-transporting red blood cells and fighting fatigue. Their high fiber content also helps prevent energy-sapping blood sugar spikes, further contributing to stable and lasting energy levels. This is a hearty soup, perfect for lunch or dinner!
Ingredients (Serves 4–6)
2 tablespoons olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 cup dried green or brown lentils, rinsed
1 can (14 oz) diced tomatoes
6 cups low-sodium vegetable broth
2 cups chopped kale or spinach
Salt and black pepper, to taste
Juice of 1 lemon
Instructions
Heat olive oil in a large pot. Sauté onion, carrots, and celery for 5–7 minutes until softened.
Add garlic, cumin, and paprika; cook for 1 minute until fragrant.
Stir in lentils, tomatoes, and broth. Bring to a boil, then reduce to a simmer for 30–35 minutes, until lentils are tender.
Add greens and cook for 5 more minutes.
Finish with lemon juice before serving.
