Trader Joe’s Veggie Enchilada Bake!

I make this recipe a few times a month. It’s so easy, has tons of veggies, and is fiber-rich thanks to the beans. An all-around win! It’s also easy to customize with whatever you have in the fridge. Feel free to add shredded chicken, ground turkey, or ground tofu for extra protein. I use the enchilada sauce from Trader Joe’s, which is to die for. I could literally eat it right out of the jar as is. For tortillas, I use the organic flour tortillas (also from Trader Joe’s). If you are short on time, grab a bag of shredded Mexican cheese. You can also shred your own cheese! I almost always use a base of zucchini, bell pepper, and onion, but any veggie will work. Kale, spinach, mushrooms, and carrots all work well.
