Dr. Weil’s Tomato Sauce
Homemade is easy and delicious!
Dr. Weil’s Tomato Sauce
I use this sauce to top pizzas or to use in lasagna - simple, fresh and delicious.
Ingredients
4 tablespoons olive oil
1 medium onion, chopped
1 28-ounce can peeled San Marzano tomatoes (see note)
4 cloves garlic, mashed
¼ teaspoon ground allspice
1 teaspoon whole dried oregano
1 tablespoon whole dried basil or 1 tablespoon chopped fresh basil
½ teaspoon red pepper flakes or to taste
Salt to taste
Sugar, to taste
Instructions
Crush tomatoes by hand or with an immersion blender.
Heat oil over medium-high heat. Add onions and cook, stirring frequently, until just translucent. Add tomatoes, bring to a low boil, reduce heat, and simmer for 15 minutes.
Add garlic, spices, and herbs, and simmer until the consistency is to your liking. Add salt to taste and, if you like, a bit of sugar. Adjust the seasoning if necessary.
