Chilled Soba Noodle Salad
This savory salad can be eaten as a main or presented as a side dish. Snap peas and radish give it a bright, summery twist!
Ingredients
8 oz soba or udon noodles
1 cup snap peas, trimmed and thinly sliced on the diagonal
4 radishes, thinly sliced
1 tablespoons toasted sesame seeds
1 avocado, sliced or cubed
2 sheets toasted nori, thinly shredded with scissors
Optional protein: chilled soft-boiled egg or sliced baked tofu
Sesame-Ginger Dressing
2 tablespoons tamari or soy sauce
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil
1 tablespoon grated fresh ginger
1 teaspoon maple syrup
1 teaspoon yuzu juice or lemon juice
Instructions
Cook soba or udon noodles according to package directions. Drain and rinse under cold water.
While noodles cook, prep veggies and whisk together all dressing ingredients in a small bowl.
In a large bowl, toss noodles with snap peas, radishes, and dressing.
Garnish with sesame seeds, avocado slices, and shredded nori.
Serve cold or at room temperature.
