Anti-Inflammatory Roasted Salmon with Garlic, Lemon & Herbs

This recipe combines omega-3-rich salmon with garlic’s anti-microbial and immune-modulating compounds, creating an anti-inflammatory powerhouse. This would make an elegant New Year’s Eve menu item as well!
Ingredients
2 wild-caught salmon fillets
3 garlic cloves, chopped (rest 10 min)
2 tsp olive oil
1 Tbsp chopped parsley or dill
1 Tbsp lemon juice
Sea salt and pepper
Directions
Preheat the oven to 400 °F (200 °C).
Place salmon on a parchment-lined pan.
Mix olive oil, garlic, herbs, and lemon juice; spread over fillets.
Roast 12–14 minutes, until opaque and flaky.
