Diana’s Anti-Inflammatory High-Iron Smoothie For Elio
Breast milk isn’t a great source of iron, so it’s important to offer iron-rich foods when babies start eating solids. Iron is needed for healthy brain development and energy levels. This smoothie is one of my favorite ways to make sure Elio gets what he needs, but people of all ages can enjoy it!
It’s packed with plant-based iron from spinach, hemp hearts, and chia seeds, and paired with vitamin C-rich fruits like berries or mango to help that iron absorb better. I also love adding fresh ginger for a gentle digestive boost.
I make a batch, freeze it in ice cube trays and pop out a cube or two as an easy snack.
Ingredients
1 cup unsweetened soy milk
1 cup fresh spinach
1/2 cup frozen fruit (blueberries, strawberries, and mango are good choices as they contain high amounts of vitamin C and can help with iron absorption)
1/2 frozen banana
1 tablespoon hemp hearts
1 tablespoon chia seeds
1 tsp fresh ginger
Directions
1. Place all the ingredients in a blender and blend on high speed until smooth. If it’s too thick, add more milk and blend again.
