Mashed Green Potatoes
Kids of all ages will love this recipe!
Mashed Green Potatoes
These mashed green potatoes are a great way to get kids to eat their vegetables. I used to make them all the time for Diana when she was little, and she plans to make them for Elio soon enough. They are easy to make and make for a great weeknight meal - especially if you microwave the potatoes, which I do. Taste and adjust the seasonings as needed.
Serves 2
Ingredients:
2 medium russet potatoes
1 cup broccoli florets
1/4 cup milk of choice (dairy or unsweetened non-dairy like cashew or almond)
1/3 cup Parmesan cheese, shredded (or plant-based alternative)
1 tbsp olive oil or butter
Salt and pepper to taste
Directions:
Bake the Potatoes:
Preheat oven to 400°F (200°C).
Scrub the potatoes, prick them a few times with a fork, rub them with a little olive oil, and place them on a baking sheet.
Bake for about 45-60 minutes, until tender when pierced with a knife.
Alternatively, prick potatoes with a fork and microwave on high, flipping halfway through, until fork tender, about 5-7 minutes.
Steam the Broccoli:
While the potatoes bake, steam the broccoli until bright green (about 2 minutes). Once cool enough to handle, finely chop the broccoli.
Scoop & Blend:
Once potatoes are cool enough to handle, slice them in half lengthwise.
Scoop out the fluffy insides, leaving a ¼-inch thick shell.
Add steamed broccoli, milk, cheese, butter, salt, and pepper to a large bowl and mix by hand. If you have picky eaters, you may want to blend everything together for a smoother texture.
Stuff:
Spoon the green potato mixture back into the potato skins.
